    I just wanted to write a quick blurb about some amazing food my italian mom made this weekend.  Saturday night she made what she said was "torta con spinaci e ricotta" (cake with spinach and ricotta).  Essentially, it was an italian spinach version of spanakopita (the greek dish) or baklava.  It wasn't so flaky though.  If she makes it again, I PROMISE I will get a picture.  Basically, it was a sweeter and flakier version of pizza dough, calzone style, filled with a riccotta and spinach mixture.  Basically it was to die for.

    Sunday, we had yet another treat in preparation for Carnivale.  This time, it was ciambella (cham-BELL-uh).  This was a version of a fried doughnut thing coated in sugar - but better than any "doughnut" you will ever have.  It wasn't as dense and it was much thinner and smaller.

    Maybe it's a good thing I don't have any pictures of these or else your watering mouth would be drooling.
